Local Catholic Celiac Contact Person: Patsy Van Huyck 

Patsy has put together a packet of information for Roman Catholics who wish to receive the Body of Christ in the form of a "low gluten altar bread" at Eucharist. She has worked with Father Brian at St. Mary's Community and Father Michael at St. Thomas Aquinas, both in College Station, TX. Patsy is currently seeking approval to have her packet available in all Churches within the Austin Diocese.

The story behind "low gluten altar breads":

Sister Lynn Marie D’Souza of the Benedictine Sisters of Perpetual Adoration in Clyde, Mo. along with Sister Jane Heschmeyer discovered this low gluten altar bread in 2004. The hosts contain 0.01% wheat gluten, which is just enough to make them valid matter for Mass, but not enough to cause problems for most people suffering from wheat intolerance. Read their fascinating story about the serendipitous discovery of a suitable bread following more than a decade of trial and error experiments. Interestingly, Sister Lynn earned her degree in Biomedical Science from Texas A&M University, and while she was living here in College Station she was an active member of both St. Mary's Catholic Community and St. Thomas Aquinas Parish. I just have one thing to say to that.
